Ginger Pear or Apple Sauce
4-5 pounds pears or apples
½-1 cup water
2 teaspoons ginger, sliced
1 tablespoon lemon juice
½-1 cup sugar, to taste
Place rough chopped pears in stock pot with water and fresh ginger. Cook on medium heat until fork tender. Process pears through food mill.
Place back in pot. Add sugar and simmer until desired thickness.
Process in hot water bath for 20 minutes. You may also freeze at this point, rather than canning.
