Kohlrabi, Fennel and Carrot Slaw


3 kohlrabi, julienned
½ cup diced fennel
¼ cup diced carrot
1 tablespoon lemon juice
½ cup plain yogurt
flat leaf parsley
salt and pepper


Make the dressing with the lemon juice and yogurt. Season with salt and pepper to taste.

Add the vegetables and mix. Allow slaw to come together for at least 1 hour.
