Zucchini and Tart Cherry Salad
2 large zucchini
2 tablespoons olive oil
1½ cups cous cous
1 cup fresh tart cherries, or ½ cup dried
juice of ½ lemon
zest of lemon
¼ cup parsley
Thinly slice zucchini lengthwise, using a knife or a peeler. Cut cherries in half to remove pit.
Cook zucchini on griddle pan until tender, or saute in olive oil. Cook cous cous in 1½ cups water until fluffy.
Mix cherries, lemon juice and zest, and parsley into cous cous. Serve cous cous with strips of zucchini on top.
