Sweet Corn and Summer Squash Chowder
This recipe turned out really good. I hope you like it!
I did make a few adjustments. I didn't have bacon, so I just used olive oil. I didn't have green onions, so I used white onion. I didn't have celery, so I just omitted it. For the milk, I used half milk and half, half and half. I also used a bit more squash. I didn't even remember to put the cheese on top at the end and it was still awesome. The soup is sweet, but the longer you cook it, the sweetness mellows a little.
